What is Gangwon kimchi like?
Gangwon has mountains on one side and a cold sea on the other, and its kimchi reflects both. There is little of the heavy fermented seafood that defines the south — instead squid and pollack go into the jar directly, fresh from the boat.
Why is Gangwon kimchi seasoned so lightly?
Winter does the preserving here, so nothing has to be forced. The seasoning stays light because it does not need to hold anything back.
