Gyeongsang kimchi is blunt. Garlic goes in hard, chilli goes in hard, and anchovy sauce rather than shrimp does the salting — a deeper, less delicate savouriness.

Nobody here is aiming for subtle. The food it sits beside is equally direct, and a restrained kimchi would simply disappear next to it.
