What is yeolmu kimchi?
Young summer radishes pulled before the root has bulked up, so the greens outweigh the white. Dressed in a thin, almost watery brine rather than a thick paste.
How is yeolmu kimchi eaten?
Made fast and eaten fast. In July the brine goes over cold noodles — yeolmu guksu — and that is dinner, no stove involved.
