Jeolla sets the richest table in Korea and its kimchi is the clearest evidence. Deep red with gochugaru, loaded with jeotgal — fermented shrimp, anchovy, croaker — and built to hold its shape through a warm winter.
That last part is the reason, not the flourish. Heat sours a jar quickly, so southern households push back with salt and seasoning. The richness is a preservation strategy that turned into a cuisine.
