Korean radish cut into cubes roughly the width of a thumb. Denser than cabbage and far slower to soften, which is why kkakdugi is the kimchi that survives longest in a shared fridge.
It sweetens as it ferments rather than only souring — the radish sugars break down slowly and the brine turns almost syrupy. This is the kimchi served beside seolleongtang, where the sweetness cuts a milky ox-bone broth.
Gongju, in Chungcheong province, is where the cut is said to have been invented.
