Small radishes the size of a finger, fermented whole with their long leafy tops still attached. The name refers to the topknot young unmarried men once wore — the shape of the radish and its greens.
Eaten by picking one up whole and biting through root and leaf together. The root snaps; the greens are softer and carry more of the seasoning.
